Cooking With Truffles}

Cooking With Truffles}

Submitted by: Christy Santo

Truffles are hypogenous (underground) mushrooms that resemble stones and vary in size from a marble to a large ball. Few truffles are poisonous. However only a small number of truffles are considered to be delicacies by people throughout the world. Most truffles do not break the surface of the oil and instead must rely on animals to eat them and distribute their spores in order to grow more of their kind. To attract animals, truffles developed scents that grow stronger as they mature. Truffles grow 3 to 12 inches usually outside the roots of trees such as the oak, chestnut, and hazelnut and do not grow beyond the range of the branches. Truffle hunters or truffle farmers use trained pigs or dogs to locate the truffles that may be underground and ready to be taken carefully out. Truffles are not easy to cultivate and although farmers and scientists have managed through the last thirty years to improve the ability to grow truffles there is still not a full guarantee of growth. Truffles can take six or more years to mature before it can be seen if truffles are growing or not. When truffles are ready to harvest the process is very methodical, slow, and labor intensive. These facts about truffles make them one of the most expensive delicacies in the world.

After truffles are methodically harvested, truffles should be placed in paper bags with appropriate markings on the bag to differentiate the varieties that were harvested. This is especially important for truffle hunters to do because an expert will be needed to ensure they are edible.

Truffles can last for several days in a paper bag placed in a refrigerator. One should not place truffles in a plastic container because the lack of air from a sealed container is bad for them. A second way to keep truffles is to place them in a jar then in the freezer where they can last for several months. A third way truffles can be preserved is to put them in oil. However, if there is no pasteurization the shelf life of truffles at room temperature will be limited. A fourth way to store truffles is to put them in rice, but all the flavor of the truffles will be absorbed by the rice. The ideal way to use truffles is to consume them as soon as possible as fresh as possible.

When truffles are used in cooking they are generally eaten raw or are very lightly cooked because the flavor compounds of the truffle are highly unpredictable. Here are a few guidelines for using truffles in dishes.

First: The truffle should not to be used with other foods with strong flavors and overwhelming aromas. The flavors can clash so it is better to use truffles to flavor bland foods like pasta, rice, and potatoes.

Second: Fat is good for the truffle. Fat helps bring out the full flavor of the truffle, which is why they are paired with butter, cheese, and oils.

Third: One should maximize the flavor of the truffle by shaving, slivering, or slicing it. Anything more and the diner will not get the most taste from the truffle.

Fourth: Save the peel from a truffle. Do not throw away because the peel can add flavor to other recipes including sauces.

Fifth: If one has preserved truffles, they will not have the same flavor so if the is wish to enhance before preservation use Truffle oil or Concentrato or a Truffle Paste.

Sixth: Fresh truffles should be used within 3 days of purchase. Preserved truffles have a long shelf life if left unopened in the jar but once opened consume within a week.

Seventh: When using any truffle in a recipe one should be aware of the flavor it has before putting it with any food. Either trying the truffle first yourself or read about it beforehand to make the best use a truffle in a recipe.

The truffle is a world prize to those who farm it for profit, to the truffle hunters, to the people in the world market who sell it, and finally to those who cook with it. The truffle, although not fully tamed, has dazzled appetites and continues to grow in stature. It may take a lot to get a truffle to grow and come to harvest but the taste, aroma, and pleasure the truffle can bring to the taste buds is well worth it.

Preparations for inaugural Bathurst International Motor Festival begin

Wednesday, February 22, 2006

The Bathurst Regional Council has begun preparing the Mount Panorama motor racing circuit for the inaugural Bathurst International Motorsport Festival (BIMF) to be held between April 13 and 16, 2006. The Mount Panorama motor racing circuit is considered to be the home of motorsport in Australia.

Council’s staff have been busy cleaning the facilities, erecting signage, checking pedestrian bridges and inspecting the track surface for the past few days.

The BIMF will be the first event to be held at the 6.2 kilometre circuit over Easter since 2000. In 2000, Event Management Specialists held the first motorcycle racing event since 1990, but due to EMS going bankrupt a short time after their 2000 event was ran and the inability of the then Bathurst City Council to find another promoter, the Easter event was canned.

The BIMF is inspired by the Festival of Speed and Goodwood Revival in the United Kingdom. The Bathurst Regional Council and event promoter Global Entertainment Team promise that the event “will cater for all motoring enthusiasts, collectors and historians”.

According to the BIMF website, the on-track program consists of:

 • Manufacturers showcasing their vehicles and track times
 • Historic touring car races
 • Aussie racing car races
 • Australian GT sports car
 • Parade laps by car clubs
 • Parade laps and races by “Legends of Motorsport”
 • Stunt car and bike events
 • Rally cars
 • Displays of cars from all eras of Mount Panorama’s history
 • The chance for patrons to purchase a ride around the circuit in a race car.

Off the track, the organisers have promised manufacturer displays, merchandise stands, music, joyflights, Off-road demonstrations and joyrides, autograph sessions and interviews with influential people in the Australian motor industry.

Imperfect immune systems help avoid autoimmune disease

Thursday, September 15, 2005

The body’s immune system is less effective at quashing disease than it could be – but if it were better the immune system might do more harm than good, according to new research by Michael Deem and colleagues of Rice University in Houston.

The immune system has apparently evolved to be mildly inefficient so that it achieves a balance between quick response to disease and decreased probability of autoimmune disease, a condition in which the immune system attacks healthy tissue.

The authors drew their conclusions from a model of the dynamics of antibody evolution. Their simulations show that while there are mechanisms that would allow the immune system to develop antibodies that respond faster and more strongly against invading pathogens, those mechanisms would also create antibodies that are likely to attack the body’s own healthy cells. The model also bolsters controversial suggestions that chronic infections could lead the immune system awry, ultimately resulting in rheumatoid arthritis or other autoimmune ailments.

The study will be detailed in a forthcoming issue of the journal Physical Review Letters.

US: Melamine from contaminated pet food enters human food chain

Sunday, April 29, 2007

At least 45 people are reported to have eaten pork which came from a hog farm in Ceres, California in the United States, where pigs from the farm were fed pet food which was recalled because it was contaminated with the chemical melamine.

So far none of the individuals have experienced signs of illnesses, but it is not known what effect the chemical, when ingested, has on humans because no major study has taken place on melamine.

On April 21, at least seven urine samples taken from pigs at hog farm, were tested and the results came back positive for the chemical melamine. At least three samples from the feed used to feed the pigs were tested and those results also came back positive for melamine.

Yesterday, the United States Food and Drug Administration or FDA, said in a statement that “we have no evidence of harm to humans associated with the processed pork product” and that “no recall of meat products processed from these animals is being issued.”

Despite the consumption of pork by humans, the FDA states that the risk to human health is minimal.

“The assessment that, if there were to be harm to human health, it would be very low, is based on a number of factors, including the dilution of the contaminating melamine and melamine-related compounds from the original rice protein concentrate as it moves through the food system. First it is a partial ingredient in the pet food; second, it is only part of the total feed given to the hogs; third, it is not known to accumulate in the hogs and the hogs excrete melamine in their urine; fourth, even if present in pork, pork is only a small part of the average American diet. Neither FDA nor USDA has uncovered any evidence of harm to the swine from the contaminated feed,” added the statement.

On March 19, the manufacturer of the food, Menu Foods, which is based in Mississauga, Ontario in Canada, recalled all of its dog and cat food which totaled over 60 million items. On April 28, Canadian officials announced that they will hold products, such as wheat and corn gluten, as well as soy and rice proteins that have been imported from China until they can be tested for melamine.

It is not known how extensive the outbreak is.

Whatever It Takes Obtaining Small Business Loans

Whatever It Takes Obtaining Small Business Loans

Whatever It Takes – Obtaining Small Business Loans

by

Allan Michael Taylor

This report is meant to be a short survival guide for those business owners who are interested in obtaining small business loans. The need for adopting guerrilla loan methods has been made worse by the diminished performance of commercial banks in offering worthwhile financial programs for businesses. While the actions suggested herein may normally be considered only when there are no other options available, they actually should probably be considered by most commercial borrowers early on in the search for commercial financing since banks are increasingly unable to offer a normal level of business funding.

Business Consulting as a First Line of Defense Simply put, the present commercial lending climate is not suited for newcomers who will have to cope with difficult finance programs targeted to small businesses as well as banks that are currently functioning irregularly. Employing an expert who can serve as a business consultant with an expertise in commercial finance should be thought of as an option for those business owners looking to increase their knowledge base substantially. A business consultant experienced in the ways of overcoming small business loan problems is a pragmatic solution to a situation that most commercial borrowers would admittedly prefer did not exist in the first place. Although you may pay a fee for a consultant’s specialized help, that cost will usually be reasonable compared to potential financial losses you might otherwise incur. Determining Your Bank’s Usefulness The most practical gauge for defining whether a bank is good from a small business owner perspective will often be guided by whether the needed commercial financing can be provided or not. Even though banks worldwide have been proclaiming that they are functioning financially at a normal level, there actually are various reports that tell a different story. A consultant with experience in business finance will know in advance which lenders are actively making commercial mortgage loans and working capital loans. If a particular bank is in fact not providing commercial loans as usual, it certainly might be because they do not have sufficient resources to do so. While this bank might not feel they deserve the bad bank label, our perspective is that results count. However small in number, good banks are legitimized by commercial borrowers when they practice healthy lending habits. Business owners should use the services of professionals to determine which banks are in good, secure standing. Get Ready to Fire Your Bank and Your Banker For owners of small businesses, the concept of firing their banker is probably still in the dark. It may feel comforting to assume the bank actually cares how one’s business is doing. Even when there is a close relationship with a commercial banker, in the current banking climate a guerrilla business loan perspective may be appropriate for small business owners who must look out for their best interests. One of the most predictive signs that a commercial borrower might need to fire their banker is an escalating number of times when their commercial banker is unable to achieve the results which were originally offered or discussed. Business Cash Advance Programs for Working Capital In order for small businesses to be successful in an unstable economy, guerrilla loan tactics which may have been overlooked due to their complexity or expense should be investigated. A merchant cash advance program (also referred to as credit card receivables factoring) is a key example of a commercial financing strategy which has frequently been a Plan B for many merchants but often not utilized in their final choice for acquiring more working capital. With a sudden reduction in business lines of credit and an increased requirement for collateral by many commercial lenders, the use of credit card processing to obtain working capital financing now has more practical appeal for the typical small business owner who needs more cash for their daily operations. More Guerrilla Tactics for the Small Business Survival Guide The purpose of this abbreviated discussion was to emphasize the need for small business owners employing a variety of methods to ensure that they can be successful in a challenging environment. In addition to the guerrilla financing tactics described above, there are several other important small business loan options which should be considered by commercial borrowers before finalizing their commercial loans, SBA financing or commercial mortgages.

Toll New Zealand announces that the Overlander train service will stay

Thursday, September 28, 2006

Toll New Zealand has announced that it will keep the Overlander train service but on a reduced timetable, the service was initially due to stop service September 30. Toll said that they reached the decision because of the huge amount of public support the train service received, including a 16,000 person petition.

The Overlander will originally run for only three days a week; Friday, Saturday and Sunday during winter on the original timetable. But during summer through to autumn the service will run seven days a week. Toll hopes that this will cover all the needs of its patrons.

David Jackson, Toll NZ CEO, said: “We have had tremendous support from the regional councils and will consider an upgraded service option and offering alternate packages aimed at both domestic users and the tourist market.”

Jackson said: “The continuation of the Overlander allows Toll to look at other funding options. We want to explore options that may be open to us to achieve this with the support and input of various interested parties. We especially appreciate the support of the regions to assist with marketing.”

The decision comes days after the New Zealand Government announced that they will not provide financial assistance.

“Over the next few weeks we will be speaking to key people with the aim being of putting in place a clear plan for the positive development of the Overlander. Clearly it cannot remain in its current format so change will be fundamental for its survival. Reducing the services will allow us to perform refurbishments on the existing carriages and it [is] expected that this work will be completed by the start of the summer season.”

Sue Morris, district mayor for Ruapehu, said: “The decision to save the Overlander is a relief. It’s hugely important, it’s our future. We are relying on the train to continue for a tourist option here, we’re about toursim in the Ruapehu District, it’s about bringing 13,000 passengers here.”

The Manning Group has a proposal out for electro-diesel trains running two times a day and stopping eight times between Auckland and Wellington. Tom Manning said: “[I am] pleased Toll is looking at upgrading options for the Overlander and I am still open to working with the company to bring better trains to the network.”

Afghanistan holds first democratic general elections

Monday, September 19, 2005

On Sunday, Afghanistan held its first democratic general elections. They are the first elections held in the country since last year’s presidential elections.

There was voter participation of about 50%, compared with 70% for the previous presidential election. According to Bimillah Bismal, head of the Afghan-UN Joint Electoral Management Body, “The election was held in a peaceful manner…there was also a high level of political awareness and participation amongst the Afghan people.”

Voting proceeded calmly, with little violence at the polling stations, most of which were able to remain open throughout Saturday.

There are approximately 5,800 candidates, competing for 420 slots in the provincial court, and 249 deputy positions in the wing of the Afghani Parliament (Wolesi Jirga).

Violence did sprout up occasionally, with four election officials killed in the past year, as well as seven contenders for deputy positions. However, the US-led coalition is working to minimize these problems during the elections, and, so far, Taliban militant actions have not been an overwhelming issue.

Women have a sizable role to play in these elections–they can vote, and 10 percent of the candidates are female. Even in the more conservative southern areas of Afghanistan, a sizable number of female voters came to the polling stations.

Preliminary election results are expected by October 10.

How To Make Homemade Carp Fishing Boilies For Winter To Defeat Readymade Baits Part 1!

How To Make Homemade Carp Fishing Boilies For Winter To Defeat Readymade Baits Part 1!

How To Make Homemade Carp Fishing Boilies For Winter To Defeat Readymade Baits Part 1!

by

Tim F. RichardsonImprove your catches and think more like a sharper carper! This article offers expert tips to empower you to make superior homemade boilies which will catch big fish in winter and summer conditions! Designing homemade baits to beat readymade baits can be as simple or complex as you decide. Complex tips, bait secrets and some simpler guidance too are included here to get you catching more big fish this year; so read on now!

A bait as simple as bread paste obviously works and the old British record carp of 44 pounds was caught on this bait by Richard Walker. If you ask the question of why this bait actually attracted this fish and stimulated into feeding then you get a crucial list of properties, characteristics and factors of an all year round bait successful in all conditions! We can use all these things and more as a guide to designing better more successful, more functionally optimised boilies, pastes, stick and spod mixes, particle mixes, ground baits, pop up baits, pellets and so on!

The first point about bread is that it easily becomes solution in water so that carp can detect it using their multiple sensory systems. The second point is about the ingredients of bread and what these do to carp senses to stimulate them, both externally and internally when in solution. This subject is incredibly significant and is as thought provoking as how water reactive bread and its constituents are, and their impacts on fish senses, metabolism, digestion, energy release, mood altering capacities and much more besides!

Just to give you a hint as to what is coming up, I can make baits which last internally intact and incredibly functionally optimised and maximised for external and internal impacts on carp and water reactivity with zero heating, and this really means absolutely no cooking, heating, boiling or steaming, of any kind. These are truly optimised baits on a huge range of functional levels and vital nutritional and stimulatory factors!

These homemade baits need heating as they are designed to become exactly what is required in the water! No boiled, steamed, or heated bait that coagulates can be truly termed optimised for nutritional stimulation and such baits are very far from being optimised for functional performance. This is a huge reason why I do not use readymade baits; you can make homemade baits work better on a wide range of levels!

Based on the bread and bread paste example, perhaps think about bait from this starting point first. Bread is composed of a number of significantly soluble components which can easily be detected by carp in all water temperatures. The second point is that many of the constituents of bread contain components that carp are highly sensitive too and likely to be attracted towards and to actively feed on and repeatedly consume!

The bulk of wheat bread is based on wheat flour, and more particularly this form of wheat flour is termed as soft and is water soluble clouding up water even when mixed with cold water. This test is something for you to think about because if the baits you use do not easily have a significant impact on the water around then they will not be outstanding baits compared to what is actually possible to create and use!

Bread is an instant bait no matter which country it happens to be used in and in fact many of its constituents are used in many bait recipes around the world. The bulk of bread consists of soluble soft wheat flour. The commercial carp fishing bait industry uses a form of hard wheat, called durum wheat, which is commonly called semolina. This is a cheap binder and a supply of carbohydrate and energy to fish and makes baits functionally bind firmer and it is a relatively insoluble ingredient.

Semolina is a very cheap binder and a big part of how bait companies can make a large percentage of their profits and it is used in even the most advanced boilie recipes as valuable carbohydrate to assist carp to utilise protein rich ingredients and additives etc more completely, as well as adding other properties such as hardening and firming baits.

For over 30 years I have made homemade baits based on a variety of components and know that carbohydrate based boilies can be made to be very potent in many ways, but I would never now make a bait based on carbohydrates. Such baits often struggle in certain situations depending upon the water, but especially where baits with a richly stimulating nutritional profile are regularly introduced in volumes. To beat readymade baits it is far better to utilise various angles of attack within your bait design so you hit carp senses on multiple levels simultaneously so your baits are optimised for stimulation and maximised for functional potency in solution!

I do not suggest you start out making baits based on carbohydrates such as semolina or soft bread making wheat flour because this would not be the most optimised way at all, and certainly not the most maximised single angle or approach to designing homemade baits that you can expect to defeat the vast majority of more well designed readymade baits!

If I suggested to you that you make a paste using soft wheat flour as used in bread making (mixed with water only,) and compared this to a paste formed with semolina and water, then you will find that each ingredient has different functional properties. You probably cannot make a more simple bait than this, yet it will catch fish! Do not underestimate simple baits in their incredibly diverse forms!

Bread paste was used to balance the bread crust on the hook which Richard Walker used to catch his 44 pound record.

So if such a bait is so basic and simple how could this possibly catch the biggest carp caught in Britain? Part of the attraction and stimulation can be seen in recipes even today and include yeast, sugar, salt, oil with the bulk ingredient being soft soluble wheat flour. If you have had a varied fishing background then you will clearly recognize how fish are attracted to bread, including anything from roach and rudd, chub and dace, crucian carp and gold fish, koi carp, tench, bream, grass carp and of course Cyprinus carpio in the common, mirror and leather forms.

The basic need of fish is for vital energy. Fish require amino acids to sustain respiration and metabolism and also optimum digestive functioning and immunity and physiological balancing of cellular pressures and passage of amino acids, hormones, nutrients and waste products etc, and calories from bread is converted to sugar within the body of the fish for basic energy to fuel survival.

Fish and humans are hard wired to provide for vital energy for survival so this means that fish will readily feed on carbohydrates and sugars and oils of an amazing variety. Of course wheat flour does contain a low amount of amino acids so this can figure a little in the equation, but if I personally wish to supply water soluble feeding triggers and protein for nutrition I choose very specific ingredients and additives and extracts for this purpose for optimising my baits.

As you probably are well aware, the basic food of humans around the world is carbohydrate food. This is wheat and other such seeds and grains and even pulse and bean derived flours and meals etc in the western world, as well as parts of the Asia, the Americas and so on. Also other sources include maize, rice and many other far lesser known foods, including amaranth and even hemp.

I make this point because in some parts of the world indigenous peoples do not merely use conventional breads and flours. Some make bread using chick pea flour; some make bread or patties from other materials including whatever is available in the locality, maybe mountainous terrain or jungle or whatever thrives there in those conditions. This includes spirulina (blue green algae,) tiger nuts, soya beans and hemp among many others. Each forms of bread has its own stimulatory set of nutrients and bioactive factors etc and this is where the link with making carp baits really comes in!

We have the same basic forms of sensory systems in many ways as carp and literally carp as ancient teleost fish are a part of our ancient ancestor heritage. This is very interesting because many bait components we use very successfully are also much liked by humans. We happen to use water covered sensory receptor sites because we live in air and not in water any longer and our senses are massively less sensitive to substances mixed with air or water compared to many other creatures including carp and dogs for instance. The important point here is that we can leverage this acute sensitivity to our advantage in endless ways to catch many more fish!

Carp detect certain substances down to as little as a few parts in a billion in solution (mixed with water.) In my early days of carp fishing in the seventies I honed my skills by making homemade baits for small carp and crucian carp. The first baits I used were chopped worm, maggots, and of course I used white and brown breads in many ways. It was very obvious that if you mixed Marmite or honey or a chemical flavour with the bread then you could change catch results dramatically especially on days when conditions were not perfect.

I am talking about bread here to keep the principle simple which is that it is a substance containing minimal amounts of water soluble components to which carp are highly sensitive. Notice that both bread and Marmite contain salt. Of course I used sweetcorn too and like bread it is rich in easily digestible water soluble carbohydrates and also contains a percentage of protein, but the modern genotypes which are super sweet sweetcorn contain more sugars and really are truly enhanced by natural sugars stimulatory to carp.

To take advantage of the fact that carp are stimulated to sweetcorn you will find that mixing liquidised sweetcorn and bread to form a paste is an instant bait and presents both baits together in a unique form.

This idea is a very simple one but is the kind of creative innovation that will keep any homemade bait maker ahead of wary carp! It is in creative innovation, and the exploiting of the acute sensitivities of carp and knowledge of substances that trigger responses of carp, from initial gulping and filter feeding to intense repetitive consumption of bait that can be produced via your bait designs. Some bait designs exploit the fact that carp will test new objects and substances in their environment if not found to be a danger or a threat, and so massively over flavoured baits made with cheap carbohydrate ingredients have fooled many carp.

Richard Walker was a highly methodical, and extremely intelligent and innovative, creative angler. Bread is attractive to many species. Having read a chapter in a book from that time by Fred Taylor who was present at the capture of the record fish, he suggested that to catch carp you needed the following items: a strong rod and fixed spool real, a pair of rod rests, an audible bite indicator or foil or bread dough bobbin indicator, 10 pound line, a big sharp hook, a large landing net, and bread or boiled potato for bait. Carp were fished for using no weight on the line and the aim was to present as little resistance as possible to a wary feeding fish.

But what makes this interesting is that the bread offers soluble stimulation and attraction to the fish, as does the carbohydrate rich quite easily water soluble potato. Ebook readers of mine have told me that in New Zealand potato flour, and potato starch are used as the bulk binders very successfully in carp baits there. This echoes my first special carp bait paste which included vanilla flavoured, sugar and milk powder enhanced custard powder which primarily was compose of maize starch.

I have made successful pastes that include bread of various kinds even today, and many modern types of bread made to be gluten free contain some very stimulating substances to exploit!

Wheat lectin, and wheat gluten intolerance and super sensitivity is a cause of many common diseases today and I gave up eating wheat bread about 6 years ago to avoid any possible further development of wheat gluten and wheat lectin intolerances and hyper sensitivities in future.

Fish are different to humans in that they have a varied diet including natural food items alongside carp baits and I am certain this is why carp diseases related to bad carp bait design are not as obvious as they could be. However the use of high oil pellets and oil glugging of boilies and use of very oily fish meals and high usage inclusions of bulk oils has definitely given many big fish liver problems and you can spot this by the bulges sticking out of the flanks of altogether far too many big carp today!

Many oils make baits almost useless in winter as they can literally become solid and lock up the soluble and digestible elements of your baits so choose wisely and use liquid lecithin alongside any lipids, oils, essential oils and other compounds etc that can be helpfully emulsified to make baits far more easily detected and digested!

Low oil use at perhaps a 5 percent inclusion is all that is required in very many carp bait recipes, depending on the oil and fat content of your various ingredients, especially the oily marine and fish ones for instance; so please do remember this when making your baits.

Fish health and future longevity is the responsibility of each and every angler. Of course by making health and natural balance orientated homemade baits, carp will have the health and vitality and energy to feed more, so you will catch far nicer fish more often now and in the future! Cloned cattle’s milk and meat seem safe, according to new study

Tuesday, April 12, 2005

A National Academy of Sciences report (.pdf) last year said that while the milk and meat from cloned animals would not likely make anyone sick, more research should be performed. Now, a new US-Japan study published in the April 11 online issue of the Proceedings of the National Academy of Sciences says that milk and meat from cloned cattle does indeed appear to meet industry standards and appears to be safe for human consumption.

As BBC News reports, the scientists, led by Professor Jerry Yang from the University of Connecticut, compared the produce from two beef and four dairy clones, all derived from a single Holstein dairy cow and a single Japanese black bull, with the produce from normal animals of similar age and breed.

The meat was analysed against more than 100 physiological, tissue and cellular components, while the milk was analysed for protein, fat and other variables. No significant differences between the produce of cloned and normal cattle were found. Higher levels of fat and fatty acids were found in the cloned cow meat, but they still fell within beef industry standards.

While the study showed the cloned produce to be within the range approved for human consumption, the scientists stressed that the research was still in its early stages. Their findings, they said, provide “guidelines” for further research with larger numbers of clones from different genetic backgrounds.

Cloning livestock may one day increase yields by copying those animals that are especially productive and especially resistant to disease.

“The milking production levels in the US are three to four times higher than levels in China; maybe even five times or more compared to cows in India and some other countries,” Professor Jerry Yang told BBC News. “Therefore cloning could offer technology for duplicating superior farm animals. However, all the products from these cloned animals must be safe for human consumption. …and it is a major issue for scientists to provide a scientific basis for the data and information to address this question.”

As USA Today reports, there is currently no law governing the sale of meat or milk from the estimated 1,000 to 2,000 cloned farm animals in the USA. But since 2003, the US Food and Drug Administration (FDA) has asked producers to voluntarily keep the meat and milk of these animals, and that of their offspring, out of the food supply.

Wired News reports that companies like ViaGen and Cyagra, which offer livestock-cloning services, have also been waiting for several years for a final say from the FDA.

“For the United States agricultural industry, (cloning) can reduce the number of cows necessary for milking,” said Jerry Yang “They can have a pleasant environment and produce even more milk.” He also said that cloning cattle from the United States, where genetic breeding is more advanced, could save developing countries 50 years of breeding.

The idea of cloning animals for human consumption is not without its critics. First, there are the welfare concerns, as most cloned animals do not make it to term before being born, and many of those that do are born deformed or prone to illness. The Humane Society of the United States has asked for a ban on milk and meat from clones for just this reason. Second, there is still the concern that healthy clones may have subtle defects that could make their food products unsafe to eat.

As the Washington Post reports, some critics are asking why it is necessary to clone cows that produce huge amounts of milk when surpluses, rather than shortages, are the main problem facing the U.S. dairy industry today.

Thaksin ordered back to Thailand on stock-sale charges

Tuesday, June 19, 2007

Ousted and living in exile, with assets frozen in Thailand, former Thai prime minister Thaksin Shinawatra was ordered today by the Royal Thai Police to appear on charges related to the sale of some of his family’s stock holdings.

The order adds to mounting, increasingly complex legal troubles for Thaksin, the telecommunications billionaire who led Thailand until he was unseated in a coup last year.

Thaksin and his wife, Potjaman Shinawatra, who are both outside of Thailand, were both ordered to present themselves to the Department of Special Investigation (DSI) by June 29 at the latest. A relative of Potjaman’s, Busaba Damapong, was also ordered to appear.

“If they intentionally fail to appear, we must issue an arrest warrant,” DSI chief Sunai Manomai-udom was quoted as saying by Agence France Presse.

Noppadol Pattama, Thaksin’s lawyer and spokesman in Thailand, could not say when his client would return.

“We will have to seek legal consultations among the lawyers. His security is only one factor. We will have to see what our options are and consult with him as well,” Noppadol was quoted as saying by Associated Press.

Last week, interim Prime Minister Surayud Chulanont and the junta’s leader, General Sonthi Boonyaratglin, both said Thaksin could return to Thailand of his own free will, in order to appeal the seizure of his assets. But later, Sonthi said Thaksin might face harm if he returned too soon.

The latest charges relate to the transfer of shares in 2000 in a real-estate company called SC Asset to a British Virgin Islands-owned company called Win Mark. Police say the Shinwatras’ controlling ownership of SC Asset was illegally concealed through nominees. Potjaman’s relative, Busaba Damapong, served as executive director of SC Asset.

Through nominee companies and disclosed shares, Sunai said, the Shinawatra family owned 79.87 percent of SC Asset. “Not only did they have control of a majority stake but also control over board decisions,” Sunai told Associated Press.

They broke the law in failing to report their ownership in SC Asset and failing to report the transfer of the shares, Sunai said. They could face five years in prison and fined at least 500,000 baht (about US$15,000), Sunai added.

Thaksin is also supected of violating the prohibition on Cabinet members holding shares in publicly traded companies, and could face up to ten years in prison and a 1 million baht fine for that.

Potjaman and Thaksin were also charged yesterday over the purchase of a 13-acre tract of land along Ratchadaphisek Road near the Thailand Cultural Centre in Bangkok.

The Office of the Attorney General says Potjaman purchased the land in an auction that was possibly rigged. Valued at 2.1 billion baht before the 1997 Asian financial crisis, and 870 million baht after, Potjaman purchased the land in 2003 for 772 million baht.

The Attorney General’s office is recommending to the Supreme Court that the land be confiscated by the government.

Potjaman is also sought in Thailand to testify before the Assets Examination Committee (AEC) on the sales of her family’s Shin Corporation stock to Singapore-owned Temasek Holdings.

She sent word today that she is seeking medical treatment for headache and irregular heartbeat in Raffles Hospital in Singapore, and that she asked the AEC to delay the hearing.

Potjaman appeared in court last month to plead not guilty to charges of tax evasion in the sale of Shin Corp. stock to Temasek.

The AEC yesterday ordered an additional seven bank accounts seized after it was discovered that the accounts are controlled by the Shinawatra and Damapong families. The accounts contain 8 million baht that was feared missing last week after the AEC ordered 21 of Thaksin’s bank accounts frozen. The 8 million baht had been transferred just before the AEC’s order, to the other seven accounts.

Authorities have frozen a total of 52 billion baht, or about US$1.6 billion, frozen, money they say came from the Shinawatra family’s sale of Shin Corp. stock to Temasek. The stock sale prompted mass protests against Thaksin last year and was one of the factors in the coup that overthrew his government. The authorities also believe that the Shinawatras and the Damapongs have 73 billion baht from the stock sale remaining in Thailand, and officials are still hunting for another 21 billion baht to seize.
